Play at your own risk.



Every day after I pick up the mail, Luke sits on our dining room table to open up each card and look at all of the beautiful families. He tells me who all the children are and what they are doing. We received a card from my good friend with her children on Santa's lap and he shouted, "There is Mia and that is Colin. Mom, who is that furry thing?" Now, Luke knows that Santa is pretend (we told him) and because of this I am guessing he was not able to link that idea to a real person. So attention all moms.....if you have small children you may want to steer clear of us around the holiday months!

Now, Matt and I discussed the idea of Santa and Christmas long before we had children and what that means has slowly evolved over the years. This year Matt was forwarded the article below and we were pleasantly shocked to find out that there is a Christian movement under way that aligns with our views about Christmas, soo cool.


What I particularly love, is that we have had so many wonderful role models that have inspired us to be true givers. As a child, I specifically remember each year my grandparents giving a cow to a farming family in South America from each grandchild. I thought it was neat then but now understand the true power of what giving up one more toy for my child could mean to another family. Matt was raised in a similar way. His mother has shared with me countless stories of giving....how her and Pax chased a family, that was boarding a bus with all of their belongings, down the highway and emptied out their pockes to help them. Or how she would put money in an envelope and hand it to a family at the store that would need it. She says, "You can't give to everyone but you will know when you should." What a great spirit to keep in your heart all year long.

I do love the holidays~ the feelings of love, family and giving are abundant. Merry Christmas!

Our Graham Cracker-Gingerbread House.

This is a fun tradition we started this year~ homemade Gingerbread Houses. In sticking with our no refined sugar theme (almost) we made them out of homemade graham crackers (easier than gingerbread), cream cheese icing and a delicious assortment of other goodies from around the house. Unsweetened cocount for the grass, dried apricots for the trim around the house, raisins for the roof trim, almond slivers for the shingles, natural black licorice for a chimney and tree trunks, and fruit twists for the sidewalk- we just put it all together as we went. The one bogey was the Earth's Best Lollipop trees that made it into the scene. Oh and our new health food store in Colorado carries All Natural Food Coloring, I am in heaven and Luke loved the splash of color. It was a three day affair to make the house. The first day we spent making and baking the graham crackers. The second day on the icing and the last day we put it all together. Luke enjoyed eating it for another three! Lots of laughs out of this one~

Newbie runner over here.

I just like to make do with the things I have. I must get this trait from my dad (who, this is the truth) has socks and shirts from when he was in college. But once my foot hurt so bad that I could not walk Matt convinced me that I needed to get new shoes for my half marathon training. I guess he was right, apparently, two years was one and half years too many for that pair. I decided to visit the running store near my house and they popped me on a treadmill to video tape my run. We then watched it in slow motion. Interestingly enough, I found out that my right foot (the one that hurt) was twisting inward. I was amazed! So, the salesgirl had me try on several shoes and would videotape my run in each shoe. Funny enough, the shoe I loved did not provide enough support but the ones I bought, perfect form on the video. To make it even better, she accepted the $20 off coupon I found for online purchases. Double win!

Four runs later, not a foot issue to be found. Wahoo. Give me the newbie stamp over here!

Giving thanks.


This year my heart is thankful for......

~ my 3 boys, an ever loving husband, inquisitive 2.5 year old and bursting with smiles 9 month old.


~ another year with my father-in-law. As he begins to fight his battle with pancreatic cancer, without the use of Western medicine, we pray the Lord's plan allows us more years than we can count to be with him.

~ being able to see my father run with my children on the beach. This year has brought some interesting medical know how into the causes and treatments for MS. I am not only thankful, but excited and anxious.

~ family time. Matt and I have had the fortunate experience of spending the last 7 months together with him at home. Looking back it is hard to believe we spent the better part of 5 years seeing each other just a few days each week. When he came to me to discuss the idea of him leaving his job, the idea seemed impossible but now it was the best decision we could have made. Sometimes you just have to rearrange your priorities.

My heart is full.

Brrr.......


12 weeks until the half marathon. This is me on my first official day of training.....50 minute run, 9 degrees. My eyelashes had icicles on them. I wish I was one of those people that could just get on a treadmill and run to my heart's desire but I can't. I dread it. I need to be outdoors. I was not sure how I would feel about the frigid temperature but funny enough, I did not mind it. In fact, I enjoyed it. It was so peaceful, the snow was lightly falling and it was very calming. Looking forward to many more snowy runs!

Overzealous potty trainer.


I am, to my own admission, an overzealous potty trainer. If Luke makes any mention of the potty or wanting to use the potty or having to go potty, my voice shrills and I eek with excitement as I shuffle him over to his little potty. I think I need to tone it down a few notches as there were two separate "potty incidences" over the Thanksgiving holiday and both involved my in-laws, how embarassing.

Act 1-
Grams was in the bathroom with the door closed and Luke, with no certain awareness of privacy, busts in and exclaims, "Come on Grams, you can do it."

Act 2-
Pax was leaving the bathroom and Luke rounds the corner, jumping up and down saying, "Yea Pax, yeah Pax."

I wonder where he learns this from.

A few more cute one-liners came out of that little guys mouth over the holiday-

Pax was trying to put a dvd on the tv and for some reason it was not working. Pax looked over at Luke and said, "Sorry Luke I can not get this to work." Luke stated, very sincerely, "It's not your fault Pax."

We were all sitting down to Thanksgiving dinner at my parent's house and Luke wanted to say the prayer. "Dear God, thank you for this breakfast. Amen"

In the cutest little Italian accent he can muster, he says, "How you doin'?"

All these changes.

While in Florida for Thanksgiving I got to spend some much needed time with my amazing sister, Jamie. She is genuine, insightful and so open with her heart. We are as alike as sisters can be and as different as sisters can be. During one of our deep conversations, she made mention of how much I have changed over the last five years and since meeting Matt.

As I think back over this time I have to agree whole heartedly. Over these years I have become a wife and a mother, my eye's have been opened to so much regarding the ways of the world, how we live and my faith. My heart's desire to seek and learn is being filled and I am eager to continue down this path.

So, one change that is always constant in our household is food, what and how we eat. This past year I have been privy to lots of new information on nutrition that is steering me down a new path in the kitchen. The movie, "Food Inc" revealed some interesting insight into the food industry. It contains a lot of information I was familiar with but putting it into a visual medium puts a whole new perspective on things. The book, The China Study, was an insightful read, focusing on the health benefits of reducing animal proteins in our diet. I also pick up "The Healing Herbs" by Michael Castleman every now and again for reference on the curative power of herbs, love it, as well as, Vive le Vegan by Dreena Burton. All of this has led us to a more veggie friendly lifestyle. We still eat meat/fish- probably once or twice a week for dinner, another two or three nights are vegetarian fare and the rest are usually vegan. We are really working on reducing our dairy consumption too. It is an adjustment (more for Matt and Luke) than myself but we are well on our way. Hooray to healthier living!

One of Matt's very favorite vegetarian dishes is this Goat Cheese and Arugula Pasta. Easy to make too so I thought I would share it.


Ingredients

  • 5 1/2 ounces goat cheese
  • 2 cups coarsely chopped arugula, stems included
  • 1 cup quartered cherry tomatoes
  • 1/4 cup olive oil
  • 2 teaspoons minced garlic
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 8 ounces penne pasta
  • Cook pasta in a large pot of boiling salted water until al dente. Crumble goat cheese into a large serving bowl. Add arugula, cherry tomatoes, olive oil, garlic, and salt and pepper. Drain pasta, and toss with goat cheese mixture.

True Friend.



Chrissy is just one those girls you are lucky to have in your life. Her and Ray came to visit us in Florida before we left and we had the best time. Her giving spirit and eagerness to try new things always excites me. Her devotion to her husband and family are to be admired. Even though there are thousand of miles between us, she calls just to see if Eli got another tooth or if Luke knows where the Pyramids of Giza are.

Oh, and one of the best things about Chrissy is her husband, Ray. These two laugh more than anyone I have ever met. Luke can never get enough of Ray, how can you blame him. The man is riding on a Junior Razor just so Luke can see how it is done.

More goodbyes.

The boys and I were able to spend time in Spring Hill visiting Matt's family right before we left. We laughed a lot and we cried even more. I cherish those days....when I think back it almost feels like I am remembering snapshots of a movie that I've watched a dozen times.

Goodbye Florida.

Leaving Florida was so bittersweet. The excitement of a new adventure, the sadness of knowing our families would be more than just a drive away.

Over the past several months I have made a conscious effort to be mindful in my life. I tend to be a major planner and while that is helpful in some situations, I almost always miss out on the fun because I am thinking about the "what is next." In the last few weeks I had with my family I wanted to enjoy every minute of it and that I did.

While I enjoyed each moment, my heart misses them every day. Two thousand miles feels like a world apart.

Girlfriends.


Getting to spend time with my girlfriends invigorates me. They can challenge me and make me laugh all in the same breath. I hosted a girl's night at my house this past weekend, a pizza making party. I made the sauce, they brought their own toppings and recipes...it was a cook-off of sorts with an official taste test, surprise and prize at the end of the night. Thanks girls for braving the weather to come out!

The surprise is revealed and the reaction is priceless, thank you Becky for providing the "larger than life" photo of Dana. So nicely donated to us by the bank that used it for promoting their "Get Financed for a RV" campaign. What??


At the end of the night, we each shared a goal. Mine~ I am running in a half marathon in Florida at the end of February with both my sister and mom. Thank you Jess for the inspiration (and congratulation on your pizza win), and for my sister and my mom for agreeing to come along for the ride. 15 weeks and counting.

Lucky Luke and Lickety Split.

As "luck" would have it, I left my camera on the back of Matt's car the day before Halloween. He pulled out of the driveway and it has never been seen again. The bad news is we had to use a disposable camera to take pictures of the kiddos on Halloween. The good news is I got a fantastic new camera that I am oodling over, still figuring it out but great pictures will soon come.

Halloween in Colorado is always cold and that day I finally convinced Luke to wear socks. Crocs just do not cut it in 35 degree weather. Gloves and a hat are next on the list.

He and Eli had a great time with each other and Luke loved his first trick or treat outing. It is unfortunate that the fun of dressing up has to be ruined by all the talk of ghosts, skeletons and goblins. Pointless to me.

Oh, technology why do you befuddle me so! The last few months have brought many changes and lots of technology issues hence my hiatus from posting. But, after weeks of being entrenched and entangled in computer, internet and camera issues we are back.

Amazingly enough, in that time we sold our house in Florida and moved to Colorado. There were a few bumps in the road and definitely lots of heartache in leaving our truly amazing family and friends but there is a comfort in knowing we are in a place that we can see staying at for a long while. Matt and I have talked about taking Luke on hikes at Deer Creek Canyon and teaching Eli mountaineering. Brings a bit of peace to my heart.

Cheers to new beginnings and lots of snow (lending itself to a warm, cozy fire!) Yes, those are stockings hung on the mantle, we got out the decorations a little early this year!

The Consummate Rule Follower.

Here I am (behind the camera) coaxing my almost 2.5 year old to jump out of his crib......


I, for some reason, felt if he started jumping out it would justify me moving him into a toddler bed..... but the kid just loves his crib and apparently he did listen all of those time that I told him he needed to stay in there.


This was the big attempt to jump and at that point I realized that my little guy is just like his mom, a Rule Follower.


Here he is several days later, in the toddler bed. No surprise here but he has yet to climb out without us being in the room. We did see on the baby cam him dangling his legs over the side but that was the extent of it. Note- the temptation of a toy bucket right next to the bed. What self restraint!

Juice It Up!

We just love juicing, it is a nice change from eating our fruits and veggies. We will juice anything we can get our hands on.....apples, oranges, carrots, ginger, beets, green peppers, spinach. You name it and we have probably thrown it into a juice before! After some research we purchased the Breville BJE510XL IKON 500 Watt Juice Extractor and have been extremely pleased, you get a lot of juice, a very dry pulp and somewhat easy clean up. Luke loves to hand me the fruit and then push down on the feed tube and watch the juice come pouring out. Before downing a glass he always insists on the mandatory, "Cheers."

Anyway, here are some of our favorite recipes.

1. Luke Delight- 3 apples, 3 carrots and a slice of ginger.
2. Jess' Masterpiece- 3 apples, 1 cucumber and 4 sprigs of mint.
3. Beet Surprise- 1/2 beet, 3 apples, 3 carrots. (It is best not to drink beet juice alone, it is an extremely powerful cleanser/detoxifier.)
4. Green Goo- handful of spinach, 4 carrots, 1 lemon and 2 apples.
5. Vitamin C Powerhouse- 3 oranges, 1 grapefruit, 1 banana (You never get a ton of juice out of a banana but if I have an old one around I throw it in for flavor.)

Hg........

Matt and I get a kick out of quizzing each other on the periodic table of elements... Au, Fe, Mg, Na, K, Hg. (Can you remember them? See answers below.) I loved science as a kid and he is just one of those ridiculously intelligent people that remembers everything, I am jealous.

Well, here is the scoop, Hg is mercury, a toxic liquid metal found in barometers, batteries, fluorescent lamps and a majority of the food products sitting in kitchen pantries. Yep, it has been found, at detectable levels, in high fructose corn syrup (HFCS). Seeing that the average American eat about 12 tsp of HFCS a day, yes, that is right, 12 tsp each day, I think it is worth looking in to.

In two separate studies, one by the Institute for Agriculture and Trade Policy and another published by the scientific journal, Environmental Health, they found that 30-50% of products containing HFCS tested positive for mercury. The American Academy of Pediatrics states that mercury is an "ubiquitous environmental toxin that causes a wide range of adverse health effects in humans." Those most greatly affected are the unborn fetus and young child. Oh FDA, where are you? Seeing that this information came out several years ago why have you not informed consumers or changed industry mandates? Why do a majority of food products sitting on my grocer's shelf, that I fed to my child STILL contain HFCS as the first or second ingredient......be your own advocate. Take a peek, what is in your ketchup, bread, jelly, Gatorade, soda pop, breakfast cereal, relish, salsa, cookies, graham crackers?

For me the safest exposure to HG, is none at all. I make homemade graham crackers now, buy the ketchup that is 50 cents more in the organic section that is both HFCS free and refined sugar free. Changing how you live will change the way you live forever.

31....here I come.

I am not a big birthday person but did have some fun with the fact that I am a 30 something this year....yeah! This is my decade, I feel it! This year the day was pretty low key, Matt took me out for brunch (my favorite meal of the day), sent me on my way for a massage and then cooked a delicious meal. I have to share the recipe because it is one of my absolute favorites. Easy to prep and tastes like it came right out of a 5 star restaurant. You can use most any white fish in this recipe. I love Chilean sea bass and have also tried this recipe with flounder, cod and tilapia, usually I just get whatever is on sale as long as it is wild, caught in the US or stamped by the Marine Stewardship Council.

Ingredients:
3 TB peeled fresh ginger
1/2 c pineapple juice
1/2 c orange juice
1/3 c soy sauce
2 TB sesame oil
1/4 tsp cayenne pepper
4- 6 ounce fish fillets
2 chopped green onions

Grate the fresh ginger and mix with orange and pineapple juice, soy sauce, sesame oil and cayenne pepper in 1 gallon zip top bag. Squeeze bag and mix well. Add fish and chill for 30 minutes. Preheat oven to 400 degrees. Place fish in a baking dish, skin side down, and pour in the marinade. Cover with foil and bake until the center of the fillet reaches 150 degrees (about 25 minutes). Transfer fish to plates. Strain marinade and place in a saute pan over high heat and reduce, reduce, reduce! Boil marinade until thickened enough to coat a spoon, about 6 minutes; spoon over fish. Garnish with green onions.

I do love myself some green beans but mine always turned out mushy until I learned this great trick! So, toss beans (with the ends cut off) in a pot of boiling, salted water. Wait until the water begins to boil again. Once boiling let it be for about 5 minutes. Drain the beans in a colander but DON'T rinse them. Put them back into the pot and stir over high heat for about one minute (this will dry them out). Toss in 1 TB of butter and serve. Crunch, crunch!

One last thing, I was spoiled rotten this year. Gift cards, clothes, picture frames, you name it but I am thrilled to say I received a Nutrimill Grain Mill so I can starting grinding my own flour to make homemade bread. I have been waiting for this, semi patiently and can't wait to get started! Ordering my grains here shortly so stay tuned.......

So, after spending most of July in Colorado and then having some major technical difficulties with my computer (and I am not a technical person)....I am back....finally! Oh, I am so elated.

Luke is at such an incredible age. When he was 6 months old, I said this is my favorite age. Once he turned a year, I swore that was my favorite age. It really just keeps getting better and better. Now that he is almost 2.5 years old we are having the time of our life. Every day it is something knew where Matt and I just look at each other and laugh 'til it hurts.

Anyway, this weekend Matt was getting Luke up in the morning and I could hear them shuffling through the bookshelf. It is completely overstuffed; the child loves to read. Luke was thumbing through the titles, pulled out his Children's Bible and exclaimed, "I found God."

Pure joy.

That same day I kissed this little guy a thousand times over.......

I (heart) CO.

So, there was good reason I did not post for most of July......well, pretty good reason. We spent several weeks frolicking in good 'ole Colorado. I am originally from Colorado and Matt (well, his mother swears when he was given a blood transfusion as a baby that he was given mountain man's blood) might as well be from there. We had an amazing time~ visiting with old friends, Matt getting to take in the live music, enjoying the fresh mountain air, and creating great memories!

My sister, Jamie, came to help Matt and I out with the kids. She is truly amazing. Patient, kind, and gorgeous! My beautiful, and pregnant cousin, Jenna, flew in from Utah. We spent some much needed "Cousin Time."


We climbed on, rode, inspected and hung out in trains.


We hiked "steep mountains" as Luke said. He loved wearing hiking boots., such a change from his standard crocs down here in FL.


Just lovely.


This sums up how we all felt!
